Antibody Testing

The human immune system builds antibodies that attack virus or bacterial invaders or foreign proteins. The antibodies will persist for a while even though the invaders or proteins have been suppressed or eradicated. Therefore, a blood test will not necessarily tell us if there is an active infection.
Another type of antibody, the auto-immune antibody, attacks parts of our own body. A few examples of these are auto-immune diseases such as Rheumatoid Arthritis, Multiple Sclerosis, Lupus and Thyroiditis.
Celiac Disease is an immune reaction triggered by wheat proteins. Our immune system rejects the wheat protein as a foreign substance.
Removing the triggers can stop the disease process.  It may take many months though before the antibody levels start to return toward normal.
